BAKED ACORN SQUASH WITH HONEY AND WALNUTS
2 medium or large acorn squash 8 tablespoons full flavored honey 1 cup chopped walnuts 1 tablespoon ground cinnamon 4 tablespoon unsalted butter, melted freshly grated nutmeg to taste
Preheat the oven to 350 degrees F.
Cut the acorn squash in half crosswise. Scoop out the seed and stringy membrane from each half, then cut a thin slice from the bottom of each half so that it sits flat.
Place the squash halves in a 8x8 inch baking dish. Pour about an inch of water into the dish around the base of the squash halves.
In a small bowl, mix the honey, walnuts and cinnamon, combining well. Spoon 1/4 of the mixture into each of the cavities in the squash.
Drizzle the squash with the melted butter and top with the nutmeg to taste.
Cover with foil and bake until a sharp knife easily pierces the flesh of the squash, about 45 minutes serve hot
