SMOKED MOZZARELLA SANDWICHES WITH LEMONY OLIVES1/4 cup extra-virgin olive oil
2 tablespoons fresh lemon juice
1 tablespoon finely minced lemon zest
1 cup mixed green and black olives, pitted, coarsely chopped
1/4 teaspoon freshly ground pepper
5 crusty sandwich rolls
About 4 to 5 ounces smoked mozzarella, very thinly sliced
10 basil leaves
Combine oil, lemon juice and zest in small jar. Close; shake to combine.
Put olives into bowl; toss with 1/2 of the dressing. Season with pepper.
Cut rolls in half; take out a little of the crumb to form shallow hollows. Spread olives on bottom halves. Layer mozzarella over olives; top with 2 basil leaves per sandwich. Drizzle inside of the tops of rolls with remaining lemon dressing. Replace the tops, pressing down lightly. Cut each in half.
