BLUE CHEESE DIP WITH BACON AND SMOKED ALMONDS4 slices bacon, browned and crumbled
2 cloves garlic, finely minced
1 (8 ounce) package cream cheese, cut into small pieces
4 ounces blue cheese, crumbled
1/4 cup half-and-half
2 tablespoons chopped chives
3 tablespoons chopped smoked almonds (for garnish)
In a saucepan, combine bacon, garlic, cream cheese, blue cheese and half-and-half. (The recipe can be completed to this point up to 8 hours before heating.)
Place pan over low heat and warm dip, stirring constantly, until cheese is melted. Stir in chives. Transfer to a warm serving bowl or keep warm over flame in fondue pot or chafing dish. Sprinkle with chopped almonds.
