HOT COCKTAIL SAUCE

1 tablespoon prepared horseradish
3 tablespoons ketchup
1 tablespoon chili sauce
3 tablespoons Key lime juice
Zest of 1 Key Lime*
1 teaspoon Tabasco or other hot sauce
Salt and coarsely ground black pepper to taste

Mix all ingredients together thoroughly and chill.

Pour over fresh seafood such as clams, oysters, shrimp, crab meat and Florida lobster, or serve in a separate ramekin.

*Grate the outer peel of 1 Key lime, but not the white pith (bitter) to enhance the flavor of the sauce.

Makes about 1 cup
