FLAVOR INFUSED FETA CHEESE
1 (8 ounce) package Athenos Feta Cheese, cut into 1-inch cubes Seasoning Variations (recipes follow) Olive oil Assorted breads and crackers
Place cheese in a bowl. Mix with one of the Seasoning Variations. Add enough oil to completely cover. Refrigerate, covered, 2 to 3 days to marinate.
Serve at room temperature with assorted breads and crackers or vegetables for dippers.
SEASONING VARIATIONS:
SUN-DRIED TOMATO AND OLIVE: Mix 1 jar (7 1/2 to 8 ounces) sun-dried tomatoes, 1 jar (8 ounces) pitted Kalamata olives, drained, 2 tablespoons mixed peppercorns and fresh rosemary sprigs.
THYME AND ORANGE: Cook 1/2 cup walnuts and 3 tablespoons chopped garlic in 1 tablespoon olive oil in a skillet on medium heat until lightly toasted. Add 3 tablespoons fresh thyme leaves, 3 tablespoons grated orange peel and 1 teaspoon ground red pepper. Mix well.
