VODKA CHERRY TOMATOES WITH HERBED GARLIC SALTFOR THE VODKA TOMATOES:1 1/2 cups red and yellow cherry tomatoes 2/3 cup vodka 1 tablespoon Worcestershire sauce 12 drops Tabasco sauce 1 clove garlic, crushed FOR THE HERBED GARLIC SALT:1/3 cup fine sea salt Grated zest of 1/2 lemon 1 teaspoon black peppercorns 1 heaping teaspoon chopped fresh rosemary 1 small clove garlic, crushed 24 hours or up to 2 days before serving: MARINATE THE TOMATOES:Cut a small cross in the base of each tomato and place in a bowl. Stir the vodka, the Worcestershire and Tabasco sauces and the garlic into the bowl of tomatoes. Cover and marinate in the fridge for 24 hours. At least 2 hours before serving: PREPARE THE HERBED GARLIC SALT:Mix all the ingredients together for the herbed garlic salt and let infuse for at least 2 hours. TO SERVE:Drain the tomatoes, reserving the liquid for another recipe. Serve with the flavored salt for dipping. TO MAKE AHEAD:The tomatoes can be marinated 2 days in advance; the herbed salt can be made weeks ahead.
