Artichoke Bites
This versatile spread can be made in the food processor, prepared up to 8 hours in advance and held in refrigerator, or made even more special by stirring in some drained lump crabmeat.

1 (14-ounce) can artichoke hearts, drained
1/2 cup mayonnaise
1/2 cup grated Parmesan cheese
1 loaf cocktail-size pumpernickel bread

Serves 8

Preheat broiler. Cut artichoke hearts into chunks.

Combine mayonnaise, Parmesan and artichokes in a small bowl; mix well.

Spread 1 tablespoon artichoke mixture on each slice of bread. Arrange bread on a baking sheet.

Broil bread until artichoke mixture is lightly browned, about 5 minutes.
