Pea Pod Salad
1/2 cup mayonnaise 1 tsp. curry powder (or to taste) 1/2 tsp. ginger 1/4 tsp. thyme 1/4 tsp. salt 1 lb. fresh Chinese pea pods 1/4 cup diced onions 2/3 cup diced celery fresh baby shrimp 1/4 cup diced red pepper 1/2 cup cashews
Mix together mayonnaise, curry powder, ginger, thyme, and salt. Set aside.
Prepare vegetables and shrimp. Add just enough mayonnaise mixture to lightly coat the vegetables.
Add cashews before serving. |
