MICROWAVE BROCCOLI RICE AU GRATIN

12 oz. fresh or frozen chopped broccoli
1 can condensed cream of chicken soup
1 cup milk
dash salt
1/4 tsp. pepper
1 1/4 cups cooked white rice
4 Tbsp. butter or margarine
2 Tbsp. minced fresh onion
4 oz. Cheddar cheese, shredded

Chop broccoli and steam until tender (or cook frozen broccoli). Set aside.

In small mixing bowl, combine the soup with milk, salt and pepper until well
blended. Stir in cooked rice; set aside.

In microwave in medium casserole dish, melt butter on LOW.

Add onion and broccoli and cook on HIGH about 2 minutes, stirring once or twice.

Add soup/rice mixture to casserole and mix well.

Microwave on HIGH 4 minutes.

Reduce power to MED-LOW and cook for 15-20 minutes. Stir well.

Top with shredded cheese and cook on MED-LOW until cheese melts.

Let stand 5 minutes before serving.
