Kids love them and they will be getting their vegetables, too! 1/2 tablespoon butter or margarine 1 small onion, finely chopped 1 cup finely shredded or grated carrots 2 tablespoons beef or chicken broth 1 egg, lightly beaten 1 pound extra lean ground beef 1 teaspoon salt 1/4 teaspoon pepper 1/4 teaspoon thyme cooking oil spray In a medium skillet, melt butter. Add onions and cook until translucent. Add carrots and broth. Cover and cook until carrots are tender. Remove from heat. In a large howl, combine onions, carrots, egg, ground beef, salt, pepper, and thyme. Mix well. Shape into 6 patties. Spray skillet with cooking oil spray. Cook patties over medium heat, partially covered, until brown on both sides and completely cooked on the inside. Note: If you like garlic, cook minced garlic with the onions and carrots.
