ITALIAN GRILLED VEGETABLES

1 medium bell pepper
1 medium zucchini
8 medium mushroom caps (about 1 1/2-inches)
2 tablespoons olive or vegetable oil
1 teaspoon Italian seasoning
Grated Parmesan cheese

Cut bell pepper lengthwise into fourths: cut each fourth crosswise. Cut zucchini into 1/2-inch slices.

Toss together bell pepper, zucchini, mushrooms, and oil. Place vegetables on griddle, sprinkle with Italian seasoning.

Grill 4-5 minutes at 450 degrees F or until bell pepper is crisp-tender.

Sprinkle with cheese before serving.
