PIZZA FRITTATA
You can substitute any of your favorite ingredients, from pineapple and ham to spinach and mushrooms in this recipe for the pepperoni. Serve with Italian breadsticks and a hot, tomato-based pasta sauce for dipping, if desired.
6 eggs Salt and pepper to taste 1/4 cup shredded mozzarella cheese 1/4 cup bell pepper diced 1 small tomato, seeded and diced 12 to 14 pepperoni slices
Preheat oven to 350 degrees F.
Whisk together eggs, salt, pepper and cheese. Add bell peppers and tomatoes and mix together. Spray a 9-inch glass or ceramic baking dish with non stick cooking spray. Pour mixture into dish. Top with pepperoni.
Bake for 25 to 30 minutes, or until egg is firm.
Makes 4 servings.
