This recipe is from the Brown Bagger cookbook.
PEANUTTY BACONWICH SPREAD
1/2 cup chunk-style peanut butter 2 Tablespoons mayo or salad dressing 1 medium tomato, peeled, seeded and chopped 1/4 cup cooked bacon pieces 2 Tablespoons sweet pickle relish 1 Tablespoon finely chopped onion (optional)
In a bowl combine the chunk-style peanut butter and the mayo. Stir well. Stir in the chopped tomato, cooked bacon pieces, sweet pickle relish and the finely chopped onion, if using.
Pack in a small airtight container and store in the refrigerator.
Makes enough spread for 3 sandwiches.
