Tropical Pasta Salad
1 cup frozen corn kernels, cooked 8 ounces pasta, cooked 1/4 cup fresh lime juice 1 tablespoon olive oil 1 teaspoon jalapeņo, minced 1/2 teaspoon cumin 1/2 teaspoon salt 3 medium tomato, diced 1 large mango, diced 1 medium avocado, diced 1/3 cup cilantro, chopped
In a large bowl, toss together the lime juice, olive oil, jalapeņo, cumin, and salt. Stir in the corn, tomatoes, mango, avocado, and cilantro. Add the pasta. Toss gently and serve.
