Cinnamon Fried Chicken Serves: 3 as a main course
500g chicken thigh fillets 3 tbsp plain flour
For the sauce: 3 tbsp soy sauce 2 tbsp brown sugar 1 red chilli, deseeded and finely chopped 1/4 tsp cinnamon 3 tbsp sake or dry sherry
To garnish: chopped chives
Make up the sauce by placing all the sauce ingredients in a small saucepan and bringing it to the boil. Soon after it has boiled, turn the heat off.
Cut each fillet into 2 pieces and season well. Sprinkle all over with plain flour.
Deep or shallow fry the chicken until cooked.
After the chicken is cooked, dip it into the sauce and place it on a serving plate.
Garnish with the chives and serve hot.
Cook's tip: Serve with mashed potato and stir-fried vegetables.
