BROCCOLI SALAD WITH RAISINS
1 lb. broccoli, chopped 1/4 lb. cherry tomatoes, halved 2 cups bean sprouts 1 cup raisins FOR THE DRESSING: 1/3 cup plus 3 tbsp. olive oil 2 tbsp. plus 2 tsp. lemon juice 1 clove garlic, crushed
Place broccoli in a steamer basket over boiling water. Cover pan and steam 5 minutes, or until bright green and almost tender. Rinse under cold water.
Drain broccoli and combine with cherry tomatoes, bean sprouts, and raisins in a bowl.
Combine remaining ingredients in a jar with a tight-fitting lid. Shake well. Pour over salad and toss.
