ONION AND AVOCADO SALAD
FOR THE DRESSING: 6 oz. olive oil 1/4 cup wine vinegar 1 tsp. Dijon mustard 1 clove garlic, crushed 1 tsp. clear honey salt and pepper FOR THE SALAD: 1/2 avocado pears, stoned 2 tsp. lemon juice 3 crisp lettuce leaves, shredded 2 spring onions, chopped 1 red pepper, cored, seeded and roughly chopped 1 oz. peanuts
Put the olive oil and next 4 ingredients for the dressing in a screw-top jar, adding salt and pepper to taste. Shake dressing well to blend before using.
Peel and slice the avocado. Place in a serving bowl and sprinkle with the lemon juice. Add the lettuce, spring onions, red pepper, peanuts and dressing. Toss well and season with salt and pepper to taste. Chill before serving.
