VINAIGRETTE WITH GARLIC AND CAPERS
1 cup good quality vinegar 1 clove of garlic, sliced 1 tbsp. Xenia capers the peel of 1/2 lemon 1 cup Xenia Extra Virgin olive oil
Place the vinegar, garlic, capers and lemon peel in a small pot. Bring to a boil. Strain through cheesecloth or a coffee filter.
Mix the seasoned vinegar with the oil and place in a bottle.
Store in a cool dark place.
