POTATO CHEESE WAFERS1/2 cup butter or margarine, softened 1/4 cup shredded sharp Cheddar cheese 1 egg white 1/4 teaspoon dried thyme, crushed 1/8 teaspoon medium grind black pepper Dash cayenne pepper 1/2 cup flour 1/4 cup potato flour Poppy seeds or sesame seeds Mix butter and cheese in mixer bowl. Add egg white, thyme, black pepper, and cayenne pepper; mix well. Add both flours and mix until blended. Shape into 8-inch log; roll in poppy seeds or sesame seeds. Refrigerate 1 hour or until firm enough to slice.* WHEN READY TO BAKE:Preheat oven to 375 degrees F. Slice 1/4-inch thick. Place on ungreased cookie sheet, 1-inch apart. Bake at 375 degrees about 12 minutes or until lightly browned. Serve warm or cold. *TO MAKE AHEAD:Dough may be mixed, shaped into logs, rolled in seeds and refrigerated one or two days before baking. Wrap in foil and freeze for longer storage. Makes: 2 1/2 dozen
