CARAMELIZED ONION MEATBALLS
5 Tbsp butter, divided use 1 large onion, diced 2 lbs. lean ground beef 1 1/2 lbs. ground pork 2 egg yolks 1 clove garlic, minced salt and freshly ground pepper to taste
Melt 1/2 of the butter in a pan, add the onion and cook over medium-low heat, stirring occasionally, for about 10 to 15 minutes, or until well browned.
Combine 1/2 of the onion with the remaining ingredients and mix well in a bowl. Reserve the remaining 1/2 of the onions. Shape the mixture into meatballs.
Melt the remaining butter in the pan, add the meatballs and cook over medium-high heat until browned and cooked through.
Add the remaining 1/2 of the onions just to heat. Transfer the meatballs to a dish and spoon over the onions and cooking juices.
