BREADFRUIT, AVOCADO AND COD FISH SALAD
1 lbs salted cod 3 potatoes, peeled, cut in wedges 1/2 ripe breadfruit, peeled (optional), cut in wedges 1/4 cup diced onion 1 avocado, diced 3 eggs, hard boiled, peeled and sliced salt and pepper (to taste) 1/2 cup extra virgin olive oil
Soak the salted cod over 4 hours change water twice to remove some of salt.
Place cod in medium pan and boil for 5 minutes, separate and allow to cool.
Boil potatoes and breadfruit until tender. Allow to cool.
Place potatoes wedges, breadfruit wedges, onion, and avocado, cubes in a serving dish. Break up cod fish into chunks, and add over vegetables. Top with hard boil egg slices.
Lightly season with salt and pepper and add olive oil over all the ingredients.
