Basic Stew (with rice, chicken or seafood, and Sofrito) 1/2 cup tomato sauce 6 stuffed olives2 ounces roasted pimentos 1 envelope Sazon1 ounce Sofrito ( recipe) 2 Tbsp vegetable oil 1 1/2 tsp capers, rinsed 4 cups water 1 cup rice (uncooked) 1 lb poultry, or lobster meat, or shrimp… 1/2 tsp salt 1 tomato, chopped 1 (8 oz) can peas Add the tomato sauce, olives, pimentos, Sazon, Sofrito, oil, and capers to a large pot. Cook on medium heat for a couple of minutes. Add the water, rice, and chicken*; season with salt. Bring to a boil, then lower heat and simmer for 25 minutes. Stir in the chopped tomato and peas. *If using lobster or shrimp, wait until the rice is tender before adding them to the stew; continue cooking until seafood is done. Adapted from unknown source
