CREAMY CUCUMBER POTATO SALAD
FOR THE SALAD: 3 cups cooked potatoes, peeled, cubed 1/2 cup chopped celery 1/2 cup chopped green onions 1/2 cup seeded chopped cucumber 2 hard cooked eggs, coarsely chopped FOR THE DRESSING: 3/4 cup light sour cream 2/3 cup fat free mayonnaise 1 tbsp prepared mustard 1/8 tsp to 1/4 white pepper
Combine vegetables and hard boiled eggs.
Combine dressing ingredients and pour over vegetables; stir gently to coat.
