FISH AU GRATIN CASSEROLE
1 1/2 lbs fish fillets 1/3 cup baby shrimp 1 tsp salt, divided use 5 oz frozen spinach (half of a 10 oz package), thawed and drained 2 tbsp cooking oil 1 cup chopped onion 3 tbsp all purpose flour 1/2 tsp salt 1/4 tsp pepper Dash of lemon dill seasoning 1 1/2 cups milk 1 cup grated cheddar cheese hot cooked noodles (optional, to serve)
Preheat oven to 350 degrees F. Grease a 3-quart casserole dish.
Lay fish fillets in prepared casserole dish. Sprinkle shrimp on top. Sprinkle with 1/2 tsp salt. Spread the spinach evenly over fish; set aside.
Heat cooking oil in frying pan. Add onion and saute gently until soft.
Mix flour, remaining 1/2 cup salt, pepper and lemon-dill seasoning into onion. Stir in milk until it boils and thickens.
Pour over fish. Sprinkle with cheese.
Bake uncovered for 30-35 minutes in a 350 degrees F oven until fish flakes easily.
Serve over noodles, if desired.
