ZUCCHINI PIZZA
FOR THE CRUST: 4 cups shredded peeled zucchini, drained and pressed dry 2 cups cooked rice 1 1/2 cups shredded mozzarella cheese 1 cup grated parmesan 2 eggs FOR THE FILLING: 1 lb ground beef 1 medium onion, chopped 1 1/2 cups spaghetti sauce 1 tsp oregano 1/2 tsp salt 2 cups shredded cheddar cheese
FOR THE CRUST: Preheat oven to 400 degrees F.
Combine crust ingredients and press into a greased 15x11x1-inch jelly roll pan.
Bake at 400 degrees F 20-25 minutes until set and lightly browned.
FOR THE TOPPING: Brown ground beef with the onion. Combine with remaining filling ingredients except for cheeese. Pour over crust, sprinkle with cheese.
Bake at 400 degrees F 15 minutes. Let stand 5 minutes before cutting and serving.
