WHITE BEAN AND TOMATO SALAD
1 (15 ounce can) white beans, drained and rinsed 1 cup (1/2 pound) tomatoes, seeded and diced 1/2 cup choppe dred onion 1/3 cup minced parsley 2 tablespoons lemon juice 2 tablespoons olive oil 1/2 tsp. each basil, thyme, and oregano 1/4 tsp. black pepper
Combine all ingredients; toss gently to mix. Chill until ready to serve.
