SURPRISE POTATOES
6 medium-size white potatoes, peeled 1 cup heavy (whipping) cream salt and pepper to taste
Preheat oven to 325 degrees F. Grease a 9x9-inch baking pan.
Shred the potatoes and rinse in cold water. Drain thoroughly.
Place potatoes in prepared baking pan and pour cream over all; sprinkle with salt and pepper. Cover pan with foil.
Bake at 325 degrees F for 1 1/2 hours. Uncover and bake 30 minutes longer or until lightly browned on top.
