LIB'S ELECTRIC FRY PAN MEATLOAF DINNER 1 1/4 lb. ground beef
1/4 lb. ground pork
1 cup onions, finely chopped
2 eggs
1 (14 oz.) can plus 3/4 can
stewed tomatoes3/4 cup fine cracker crumbs
Salt and pepper to taste
5 medium-size potatoes
3 medium-size carrots
3 bell pepper rings
Combine all ingredients, except 3/4 can stewed tomatoes, and mix well. Shape into a loaf. Place in the center of a greased
electric fry pan.
Peel and quarter potatoes and place around sides of meat loaf with thick sliced carrots. Place bell pepper rings on top of meat loaf. Pour the remaining 3/4 can stewed tomatoes over meat loaf and potatoes.
Cover and cook at 325-350 degrees for approximately 1 hour or until done.
