CHEESE, BACON AND POTATO TART 1 tbsp. butter 18 slices bacon 1 1/2 lb. russet potatoes, peeled and sliced 1 1/4 cups shredded Fontina cheese Salt and pepper Preheat the oven to 400 degrees F. Butter the inside of an 8-inch 8 inch round baking dish. Arrange the bacon in a spiral fashion on the bottom of the prepared baking dish, bringing it up the sides, and draping it over the edges. Arrange 1/3 of the potatoes in a spiral, beginning at the center of the pan. Sprinkle 1/3 of the cheese on top of the potatoes and create two more layers of potato and cheese. Fold the overhanging bacon across the top of the final layer. Bake uncovered for about 1 hour, or until potatoes are cooked. Makes 8 servings.
