GOLDEN CHICKEN FINGERS 3 cups bread crumbs 3/4 cup grated Parmesan cheese 1 tablespoon garlic powder 1 tablespoon dried basil 1 teaspoon dried oregano 1/2 teaspoon paprika 1/4 teaspoon black pepper 2 eggs 2 tablespoons olive oil 1 tablespoon water 4 skinless, boneless chicken breasts (5 ounces each) Preheat oven to 425 degrees F. Spray a large baking sheet with vegetable cooking spray. In a shallow dish, add bread crumbs, Parmesan, garlic powder, basil, oregano, paprika and pepper; mix well. In a small bowl, beat eggs, olive oil and water. Cut each chicken breast into 6 strips. Dip each piece into egg mixture, allowing excess to drip back into bowl. Dredge chicken in crumb mixture, turning to coat. Place on prepared baking sheet. Bake chicken fingers, turning half way through cooking, until golden brown, about 15 minutes. Serve immediately.
