SALSA ROAST POTATOES
2 pounds red potatoes, coarsely chopped 4 tablespoons salsa 2 tablespoons chopped black olives 2 tablespoons olive oil 1 teaspoon salt 1/2 teaspoon pepper
Preheat oven to 425 degrees F.
Combine potatoes, salsa, olives, olive oil, salt, and pepper in a large bowl; stir to coat potatoes.
Spread potato mixture in a large baking sheet; cover with foil.
Bake potatoes for 15 minutes. Remove foil. Stir potatoes. Cover and continue baking potatoes until tender, about 15 minutes longer.
VARIATION: For a pretty presentation, add 1/2 cup minced red or green bell pepper with the potatoes.
