CARBOHYDRATE-FREE NACHOS 1 lb. ground beef 1 pkg taco seasoning mixpork rinds shredded nacho cheese chopped jalapenos (optional) Brown ground beef in a skillet; drain and stir in (dry) taco seasoning mix. Place pork rinds in a single layer on a plate. Cover the rinds with the meat mixture, then the shredded nacho cheese. Sprinkle jalapenos over the top, if using. Microwave for about 1 minute or until cheese is melted. Note from source: The seasoned meat helps you forget the refried beans. And you don’t have to use jalapenos if you don’t like them that hot.
