PINEAPPLE CASSEROLE
Note from source: This recipe is always a hit with my family and others as well. I usually make this dish for the holidays. However, I always get disappointed for not having any leftovers. It's that good. I always double my dish too and still no leftovers.
2 cans (16 oz. each) crushed pineapple, drained 1 cup grated cheddar cheese 1 cup sugar 3 tbsp flour 1 sleeve Ritz crackers, crushed 1 stick (1/2 cup) butter, melted
Preheat oven to 350 degrees F.
Place drained pineapple on bottom of a 2 quart casserole dish.
Mix together cheese, sugar, and flour and spread over pineapple.
Mix crushed Ritz crackers with melted butter and spread over top of cheese mixture.
Bake at 350 degrees for 25 minutes.
Note: Can double recipe and use a 13x9-inch baking pan.
