ITALIAN RICE PUDDING

RICE:
1 1/2 cups water
1/2 cup uncooked converted rice
1 cinnamon stick
1/2 teaspoon grated orange peel
CHEESE MIXTURE:
1 cup ricotta cheese
1/3 cup Domino® Granulated Sugar
1 1/2 teaspoons vanilla
1/2 cup chopped, dried cherries
1/4 cup slivered almonds
1/4 cup semi-sweet miniature chocolate chips
cinnamon

TO PREPARE THE RICE:
Combine all rice ingredients in medium saucepan; bring to a boil on high. Reduce heat to low; cover. Cook 15 to 20 minutes or until rice is tender. Remove cinnamon stick; set rice aside to cool.

TO PREPARE THE CHEESE MIXTURE:
Combine ricotta cheese, sugar and vanilla in food processor bowl or blender container. Process on high until well mixed, 30 to 60 seconds.

Combine cooled rice, cheese mixture, dried cherries, almonds and chocolate chips in large bowl; mix well. Refrigerate 1 to 2 hours or until chilled.

Sprinkle each serving with cinnamon.
