GOLDEN WHOLE WHEAT MUFFINS
1/3 cup butter or margarine 1/4 cup packed brown sugar 2 eggs 1 1/4 cups all-purpose flour 3/4 cup whole wheat flour 1 tablespoon baking powder 1/2 teaspoon ground cinnamon 1/4 teaspoon baking soda 1/4 teaspoon salt 1/8 teaspoon ground ginger 1 cup plain yogurt 2 cups cored and finely chopped Golden Delicious apples
Preheat oven to 425 degrees F. Grease 12 muffin cups.
Cream butter and brown sugar until light and fluffy. Beat in eggs one at a time.
Combine flours, baking powder, soda, salt and spices. Add dry ingredients and yogurt alternately to creamed mixture. Fold in chopped apples. Spoon batter into 12 muffin cups; muffin cups will be full.
Bake at 425 degrees F 20-22 minutes or until wooden pick inserted near center comes out clean.
