SOUTHWEST-STYLE POTATO SOUP
4 to 6 large potatoes, peeled and chopped water 1(4 oz) can chopped green chilies 1/4 cup chopped onion pinch garlic salt salt and pepper 1/4 cup butter or margarine grated Monterey Jack Cheese
Place potatoes in large saucepan. Add enough water to cover by 2-inches. Add green chilies and onion. Season with garlic salt and salt, and pepper to taste. Cover and boil over medium heat until potatoes are done.
Mash slightly. Add butter; simmer covered for one hour.
To serve, ladle over cheese.
