CINNAMON APPLESAUCE CAKE
4 cups apples, sliced or chopped 2 large eggs 1/2 cup sugar 1/2 cup cinnamon applesauce 1/4 cup oil 2 tsp cinnamon 1 tsp nutmeg 1/2 tsp salt 2 1/2 cups unsifted cake flour* 2 tsp baking soda 1 cup chopped nuts
Preheat oven to 350 degrees F. Grease (or oil) a 13x9-inch baking pan.**
Mix together apples and eggs. Add next 6 ingredients.
Mix flour baking soda together, add nuts, then stir into the apple mixture. Pour into prepared baking pan.
Bake 35 to 40 minutes.
Great served warm with more cinnamon applesauce.
*All purpose flour works well too if you decrease the flour amount to 2 1/4 cups.
**To be different, try baking in a loaf pan, increasing time to 1 hour to 1 1/4 hour or until cake tests done. Also can be baked in mini loaf pans, for about 30 minutes.
