CRISPY CHICKEN BITES
1 lb. skinless, boneless chicken breasts 1/4 cup flour 1 tsp. dried parsley flakes 1/2 tsp. poultry seasoning 1/8 tsp. salt Dash pepper 1 egg, beaten 2 tbsp skim milk 1 1/4 cups finely crushed wheat crackers (about 30)
Rinse chicken. Pat dry with paper towels. Cut the chicken into 1-inch pieces.
In a plastic bag combine the flour, parsley, poultry seasoning, salt and pepper. Add the chicken pieces, a few at a time, to the seasoned flour mixture. Close the bag and shake to coat chicken pieces. Set chicken aside.
In a small mixing bowl combine the beaten egg and milk. In another small bowl place the finely crushed wheat crackers.
Dip the flour pieces (about 1/4th at a time) into the egg/milk mixture. Roll the chicken pieces in the crushed crackers. Place the chicken pieces in a single layer on a large ungreased baking sheet.
Bake at 400 degree for 10-12 minutes or till chicken pieces are no longer pink.
Serve with your favorite dipping sauce.
