ELBOWS SALAD WITH AVOCADO, TOMATO AND MOZZARELLA (ELBOWS PLUS CON AVOCADO, POMODORO E MOZZARELLA)
2 cups (5 medium)plum tomatoes, diced 3 cups (3 whole)avocados, diced 2 1/2 cups ( 16 ounces)fresh mozzarella balls, small-sized, halved 1/3 cup plus extra virgin olive oil salt and freshly ground black pepper (to taste) 1 package (16 ounces) BARILLA PLUS Elbows
Bring a large pot of salted water to a boil.
Combine tomatoes, avocados, mozzarella, basil, and olive oil in a large bowl. Season with salt and pepper. Let mixture marinate for 20-30 minutes.
Cook pasta 1 minute under lowest cook time on package. Drain and pour onto a flat surface. Drizzle with a small amount of oil and let cool.
Add cooled pasta to ingredients in bowl; toss and serve.
