HAMBURGER BISCUIT BAKE WITH VEGETABLE SAUCE
1 pound ground beef 1/4 cup chopped onion 4 ounces sharp process American cheese, shredded (1 cup) 1/4 cup mayonnaise or salad dressing 2 tablespoons snipped fresh parsley 1 1/2 cups packaged biscuit mix 1/2 cup milk FOR THE VEGETABLE SAUCE: 1 (10-1/2 ounce) can condensed cream of mushroom soup 1/3 cup milk 1 (8 1/4 ounce) can mixed vegetables
Preheat oven to 375 degrees F.
Cook beef and onion until meat is browned; drain excess fat.
Stir in cheese, mayonnaise, and parsley; set aside.
Combine biscuit mix and milk and stir until moistened; turn out onto floured surface and knead 8 to 10 times. Divide in half; roll into two 8-inch circles.
Press one circle into well greased 8 1/4x1 3/4-inch round ovenware cake dish. Spread meat mixture over biscuit. Top with second biscuit.
Bake at 375 degrees F for 20 to 25 minutes.
Cut wedges and serve with vegetable sauce.
TO MAKE THE VEGETABLE SAUCE: Blend cream of mushroom soup and milk. Stir in mixed vegetables; heat.
