SAUSAGE & WHITE BEAN DIP

1 pkg. roll sausage, cooked, drained and crumbled
2 tsp. KEY LIME JUICE
1 head garlic
1/2 tsp. Salt
1/2 cup olive oil
1/4 tsp. pepper
2 (15 oz. each) cans small white beans, drained and rinsed

Garnish: chopped scallions, Tomatoes, olives
1/2 cup dried thyme

Slice off top of garlic head, exposing cloves. Wrap in foil and bake at 350o for 40 minutes or until cloves are very soft. Squeeze cloves out of skin into food processor bowl. Add 1 can white beans and olive oil; puree until smooth. Add remaining ingredients; blend well. Garnish. Serve at room temperature with tortilla chips or crackers. Makes 4 cups.
