SONORAN RICE
2 tbsp safflower oil 1 (28 oz) can whole peeled tomatoes, drained, chopped 1 1/2 cups finely chopped onions 2 tbsp tomato juice 1 jalapeno chili, seeded and finely chopped 1 tsp diced green chilies 2 tsp chopped fresh basil 2 tsp garlic powder 1 1/2 tsp ground cumin 1 tsp white pepper 3/4 tsp ground coriander 1 1/2 cups uncooked rice
Preheat oven to 375 degrees F.
Cover the bottom of casserole with oil. Combine all ingredients but rice in casserole. Stir over high heat 1 minute, reduce heat to medium. Add rice, cover, and transfer to oven.
Bake until liquid is absorbed, about 35 minutes.
