LIMA BEAN SALAD
2 pkg (10 oz each) frozen baby lima beans 3 tbsp instant minced onion salt 1 1/2 cups water 4 tbsp vegetable oil 1 tbsp tarragon vinegar pinch dry mustard 1/4 tsp pepper 1/2 of a 16 oz can baby tomatoes, drained
Put lima beans, onion, 1 tsp salt and water in a saucepan and boil until beans are just done, about 15 minutes. Drain thoroughly. Put in a bowl.
Blend oil, vinegar, mustard, 1/2 tsp salt and pepper very well until cloudy, then pour the mixture over the hot beans. Let stand 20 minutes.
Add drained tomatoes. Mix lightly and chill.
