GREAT NORTHERNS AND TUNA WITH LEMON AND GINGER DRESSING
FOR THE DRESSING: 2 tablespoons fresh lemon juice 1/2 teaspoon soy sauce 1 teaspoon fresh ginger, minced 2 teaspoon fresh garlic, minced 1/4 cup extra-virgin olive oil FOR THE SALAD: 2 cans (15 ounces ) Great Northern beans, or 3 cups cooked dry-packaged Great Northern beans, rinsed, drained 1 (9 1/4 ounces) can water packed light tuna, drained 6 cups Romaine lettuce, torn Lemon slices (garnish)
Prepare the dressing by combining lemon juice, soy sauce, ginger and garlic. Whisk in olive oil.
Combine tuna and beans. Add lettuce and dressing. Toss very gently.
Garnish with lemon slices. Serve immediately.
