ORANGE-SPINACH SALAD WITH HONEY CARAWAY DRESSING
FOR THE HONEY CARAWAY DRESSING: 3/4 cup mayonnaise 2 tbsp honey 1 tbsp lemon juice 1 tbsp caraway seed FOR THE SALAD: 1 (10-oz) bag fresh spinach 1 med head iceberg lettuce, shredded 2 tbsp diced red onion 2 tbsp diced green bell pepper 2 tbsp diced pimento 2 large oranges, peeled and chopped 1 small cucumber, thinly sliced
TO PREPARE THE HONEY CARAWAY DRESSING: Mix ingredients for the dressing together until blended. Refrigerate until needed. Makes 1 cup.
TO PREPARE THE SALAD: About 30 minutes before serving, tear spinach into bite-size pieces in a large bowl. Add lettuce, onion, pepper, pimento, oranges, and cucumber. Pour on Honey Caraway Dressing. Gently toss to coat spinach well.
