CRABMEAT-STUFFED JALAPENOS

1/4 cup butter, melted
1/2 cup chopped onion
1/2 cup chopped celery
1/4 cup chopped garlic
12 ounces fresh crabmeat
2 eggs, slightly beaten, divided use
1 teaspoon salt
1/2 teaspoon white pepper
1/2 cup cracker meal or bread crumbs (plus extra for coating)
10 jalapenos, cut in half, seeded, and parboiled

Heat butter in a nonstick skillet and saute chopped onion, celery, and garlic until softened, about 3 minutes.

Combine in bowl with crab, egg, salt, pepper, and cracker meal, and mix (filling should stick together). If too dry, add another egg. Stuff peppers halves liberally.

Dip peppers in beaten egg then roll in cracker meal to coat. Let set in refrigerator for 20 minutes.

Deep fry (or fry in skillet) in hot vegetable oil until golden brown.
