This is a recipe my Mom served us when we were growing up. It's very good.
COMPANY RICE
1 cup rice (not instant) 1 small chopped onion 1 stick butter 1 jar mushrooms, drained 2 cans beef consommé, undiluted
Preheat oven to 350 degrees F.
Sauté rice and onion in butter until rice begins to brown.
Add mushrooms and consommé. Pour into greased casserole.
Bake, uncovered for 45 minutes.
Servings: 6-8
