BLACK BEAN SALAD

3 tablespoons fresh lime juice
2 tablespoons olive oil
15 ounce can black beans, rinsed and drained
1 mango, peeled and chopped
1 ripe avocado, peeled and chopped
1/2 red onion diced
Tabasco, to taste
2 tablespoons minced fresh parsley
1 cup shredded Romaine lettuce

In a bowl, whisk together lime juice, oil, and salt to taste. Stir in remaining ingredients, except lettuce, and season with salt and pepper to taste. Let salad stand, stirring once or twice, 15 minutes for flavors to develop.

Serve salad on top of lettuce.
