ZUCCHINI SWISS BAKE
3 cups sliced sweet onions, separated into rings 3 cups thinly sliced zucchini 1/4 cup margarine 2 eggs, beaten 1/4 cup milk 1/2 tsp. dry mustard 1/2 tsp. salt 1/8 tsp. ground black pepper 1 cup shredded Swiss cheese, divided use
Preheat oven to 375 degrees F.
Saute onion and zucchini in margarine until tender. Place in 8x8-inch casserole dish.
Combine remaining ingredients with 1/2 cup of the Swiss cheese. Pour over vegetables. Sprinkle the remaining 1/2 cup Swiss cheese over top.
Bake 375 degrees for 20 minutes or until firm.
