CHOCOLATE-BALSAMIC VINEGAR1/2 cup
superfine sugar1 ounce
dark chocolate7 tablespoons vinegar (half
balsamic and half
apple cider vinegar)
Gently heat sugar and vinegar in small, deep pan until sugar dissolves, then leave to bubble slowly for 5 minutes.
Take pan off heat and whisk in chocolate well; let cool.
When cool, stir again quickly. Pour into small, clean jar, seal and store until needed.
Makes about 1 cup
